My brother came into the kitchen just now, and said, “It smells like cocoa powder and coconut,”. I told him that he was right, that was exactly what it was. All three of these ingredients I could not have had a month ago, but they are all technically AIP, and there are only three ingredients, so hopefully you can have it. Hopefully.
This is really easy to make, as well, with so little ingredients! Here they are, with the quantities for one serving.
Ingredients:
- 1 can Coconut Milk
- Coconut Sugar
- Unsweetened Cocoa Powder
Yup, that’s it. I hope you are not shaking your head in disappointment, now, sadly lamenting that you can’t have it. I couldn’t have it either, a month ago. If you are bounding with surprised joy, though that you can have this, that congratulations! You should have a party! 😀
Here is the recipe:
Fill your favorite mug up with coconut milk, leaving room to stir. You can use either just the ‘coconut water’ (not sure exactly what it is called’ from the can of coconut milk, or you can mix it with the cream part. If you mix it with the cream part, though, keep in mind that it is extremely filling that way, but it does make it much more creamy and rich. I prefer the taste with the cream part mixed in, but I can only drink half a cup (which is saying something, as I am a teenager, capable of eating a whole lot 😉 ). It is great with just the ‘coconut water’ part, though, too. Anyway, add a spoonful or two (to taste) of cocoa powder, and a bit of coconut sugar (again, to taste). You can try to mix it in now, but it is easier to just wait until after it is heated. Heat it in the microwave, or on the stove. Mix in the cocoa powder. I suggest using a fork, it breaks up the chucks of cocoa powder best. Or a whisk.
