I was going to title this one ‘3 Ingredient Cucumber Salad’ to go with my Hot Chocolate recipe, but it technically has four ingredients, alas. 😉 It’s quite simple, easy, and safe. Plus, you can ever serve it to people who don’t have all your food sensitivities and they won’t think it’s anything strange!
Ingredients:
- Cucumbers (2-3)
- Salt
- Olive oil or avocado oil
- Dill (fresh is best, but not required)
Can you have all those? Great! (If not, I’m very sorry).
Serves: around 5 people
Here’s the recipe:
- Slice the cucumbers into half-moons, and put them into a bowl. You can peel them first if you want, whatever your preference it. To me it tastes just fine either way, and if you are lacking in spoons (a.k.a. energy), why peel them?
- Add the oil, just enough to get all the cucumbers wet.
- Add the salt and dill to taste, and stir them in. (Make sure there is enough salt, you might find that once you get to the bottom half when serving it, the salt didn’t reach down there enough.)

See? I told you is wasn’t hard. 😉 You can keep it in the refrigerator, however, after more than a day it will get soggy and you probably won’t want to eat it, so don’t plan on having leftovers.
